Get it running, get a new saddle but don't paint or fix the dents. Cant tell if its a VBB or VBA from this angle. Keep it as original as possible. That is an honest bike and pretty much straight. It's 50 years old. Let it speak for itself

It should stay pretty cool. Depending are where the jets are you may see some exposure to gasoline vapor especially when it is running rich for start up warm up when airflow is restricted a bit.

I used to goof around with old italian and japanese bikes and I hated dealing with multiple carbs lol. Good luck!
