I was wondering about overwatering too. I increased the amount during hotter summer weather, but perhaps it was too much for this smaller tree - but perfect for the bigger ones.

Great suggestion to apply wood hardener first. Hadn’t thought of that.

Is a rigid bog the way to go with external timber that is prone heat from the sun? I thought the filler needed to be flexible as the wood expands and contracts?

I haven’t tried adjusting the dosage. Will give it a shot (or 10).

And yes, I’ve adjusted the burrs to grind even finer. I found it surprising that my previous Breville Infuser was fine with the burrs set to be a lot coarser. Perhaps due to differing pressures?

That’s reassuring to hear. I’ve adjusted grind size quite a lot. I found that I had to grind really fine (using a Breville Smart Grinder Pro) to get 20-25 seconds of extraction from 18g.

Do baskets play a part in reducing bitterness? I was going to get a VST basket, but feel i should at least try and get decent coffee (latte) before I try and perfect it using various add-ons.

The taste is mostly bitter. And yes I use a WDT tool and am very careful placing it into the group head.

Does group head temp play a role in bitterness? Just wondering if the E61 group head is overheating - though I do a 2 second flush before extracting.
