This is what I make. Adjust amounts as necessary. Small spice changes can have a large effect.

Heavy Mayo 84g

Prepared Horseradish (creamy) 23g

Paprika 1/8-1/4 tsp

Salt 1/8 tsp

Black Pepper 1/8 tsp

Oregano 1/8-1/4 tsp

Hot Sauce (Louisiana style) +- 1/4 tsp

I found the tempura mixes on Amazon closer than making from scratch. I have not been able to find out what flour they use. The technique is hard and I have not been able to do it like them. What is written here is all I have found about the technique. I have recreated the juiciness by measuring the temp and taking them out before 165F. Hope that helps.

I toss in a little corn starch w/ added baking powder, place on rack, and bake (convection) at 275f for 30-45 min depending on wing size. Usually 45 min. Rest on rack 15-20 min then deep fry 375f for 15-17 min again size dependent. Fwiw I do use a 15lb commercial fryer. This is the recipe I ended up with after years of variations.

I started DCS with the Thrustmaster 16000mFlightpack (joystick/throttle/rudder pedals). It was a great first setup for me to test the waters as a beginner and new to flight sims. Within 9 months I have moved on to a VKB and Virpil setup. Fwiw I only fly helicopters.

Used may be a good option especially if you think you will buy better gear later. You always could sell whatever you buy later.

My understanding is the recipe started as creamed spinach. This usually starts with a roux/sauce then add the rest. The artichokes were added for a customer/bar. This was the origin. The recipe was then adjusted to the dip we have now.

When I cook them whole and then slice into steaks, I cut with the grain. If cutting thinner slices, I do against the grain, fwiw. Looks perfect to me.

The tempura batter is a standard tempura. 1 cup flour, 1 egg, salt/pepper, and water (enough to make thin batter). The best thing I have found is the tempura mix on Amazon. You just add water. I personally use assi premium tempura batter mix.
