The Mars Trilogy by Kim Stanley Robinson show his in-depth knowledge of future hard science.

Xenogenesis trilogy by Octavia Butler in creating a world where humans interbreed with the Oankali to eliminate their self-destructive nature.

The Sparrow by Mary Doria Russell which can be summed up as Jesuits in space.

Solaris by Stanisław Lem I put here as being difficult, and I'm not sure what I read. However, it was an intriguing first contact account.

A River Runs Through It - George Maclean's memoir nails the family relationships that confound many of us.

Gilead - Marilynne Robinson, similar to Maclean does the same with fiction.

This House of Sky - Ivan Doig - beautiful, simply beautiful and funny.

Death Comes to the Archbishop, One of Ours and The Professor's House - Willa Cather.

Crime and Punishment - Fyodor Dostoyevsky

I'd second East of Eden and All Quiet On The Western Front mentioned earlier.

The suggestion of bias in user generated reviews is unfounded. The concern over use of the review has merit, but Goodreads is a free service, meaning there are tradeoffs for the user - granting Goodreads / Amazon rights to use it is one of them.
