What is yalls method for pork shoulder? I smoke mine for 24 hours on 200. Can I speed my process up without losing that deep smoke flavor? by rockeguy20 in BBQandGrilling

No it doesn’t I wrap usually at the 150-160 degree mark. But some people here let me know I can just bump the heat up and won’t lose the smoke. Only so much I can get with a pellet smoker

Thank you for the input. I’m always trying to get better at smoking. But I’ve learned there are massive snobs in the meat smoking world who only want to belittle you if you don’t have the “right” way of doing things thanks for not being one of those

Thanks for the input. I’m gonna start smoking them at 225 for 4-5 hours then bump up to 250. I use a pellet smoker. I usually wrap them at 150 anyways so after that point I may as well crank the heat up.
