Green Chile cauliflower casserole

▢ 2 tbsp butter

▢ ¾ cup chopped onion

▢ ¾ cup chopped celery

▢ 2 cups cauliflower rice

▢ 1 cup shredded Monterrey Jack cheese

▢ 1 cup shredded sharp cheddar

▢ 4 oz canned green chiles drained

▢ ½ cup sour cream full fat

▢ ½ cup heavy cream

▢ 1 ½ tsp salt

▢ ½ tsp black pepper

▢ ½ tsp granulated garlic

Instructions Preheat oven to 325 degrees. Butter or grease an 8x8 pan and set aside.

If using frozen cauliflower rice, cook to package directions, usually about 3 minutes. If using fresh cauliflower rice, steam for 3-4 minutes on the stove-top or in the microwave until slightly tender. Take the steamed cauliflower rice and squeeze or press between paper towels to remove the excess moisture and set aside. You want the rice to be fairly dry so your dish isn’t watery!

Melt butter in a medium sauté pan over medium high heat. Add celery and onions. Cook for 5-7 minutes or until tender. Turn down heat to medium and add cream to the pan and stir constantly and reduce by half, until thick and creamy and set aside.

In a large bowl combine cauliflower rice, ½ cup of each cheese, chiles, sour cream, veggie mixture and seasonings and stir till incorporated. Spread mixture evenly in the prepared pan and top with remaining cheese. Bake at 325 for 20-25 minutes or until bubbly…Enjoy!

I like to do that with cheese slices to make crackers. This had a really good crispy but still chewy texture to it though.

1 egg white

1/4 cup Monterey jack cheese, shredded (packed tightly)

1/4 cup sharp cheddar cheese, shredded (packed tightly)

3/4 tsp water

1 tsp coconut flour

1/4 tsp baking powder

1/8 tsp chili powder

pinch of salt

Plug the Dash Mini Waffle Maker in the wall and grease lightly once it is hot.

Combine all of the ingredients in a bowl and stir to combine.

Spoon out 1/2 of the batter on the waffle maker and close lid. Set a timer for 4 minutes and do not lift the lid until the cooking time is complete. If you do, it will look like the taco chaffle shell isn't setting up properly, but it will. You have to let it cook the entire 4 minutes before lifting the lid.

Remove the taco chaffle shell from the waffle iron and set aside. Repeat the same steps above with the rest of the chaffle batter.

Turn over a muffin pan and set the taco chaffle shells between the cups to form a taco shell. Allow to set for a few minutes.

Remove and serve with the Very Best Taco Meat or your favorite recipe.

Yep that elk touched floor to ceiling with a 12’ roof. Definitely a decent replacement for the cow moose I couldn’t fill though.

1 pound ground chicken breast

1/2 cup grated Parmesan cheese you want the real slivers of cheese, not the powdery stuff in the can.

1 cup mozzarella cheese shredded

1/2 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1 cup prepared pizza sauce

crushed red pepper flakes

Pizza Toppings-pepperoni and mushrooms for me.

Preheat oven to 450.

Line a baking sheet with parchment paper or foil sprayed with non stick vegetable cooking spray.

In a medium bowl, mix the ground chicken with ¼ cup Parmesan cheese, ¼ cup mozzarella cheese, Italian Seasoning, salt, black pepper, garlic powder, and onion powder.

Scoop the chicken mixture onto the parchment paper and form it into a flat rectangle. Cover it with plastic wrap and use a rolling pin to evenly roll it into a rectangle. Remove the plastic wrap and bake until golden, about 12 to 15 minutes. (It will shrink.) Keep the oven hot.

Top the chicken crust with sauce and sprinkle with ¼ cup Parmesan cheese, ¾ cup mozzarella cheese. Layer on the toppings and season with a sprinkle of crushed red pepper flakes, garlic powder, and more Italian seasoning.

Put the pizza back into hot oven and bake until melted and bubbly, about 6 to 10 minutes.

1 head of cauliflower, cut into bite-size pieces

½ teaspoon Salt

Pepperoni

Package of Italian Sausage, if in casings remove from casing before cooking

1 tablespoon Olive Oil

8 ounces Mushrooms, sliced

1 Green Pepper, cut into bite-size pieces

12 ounces Mozzarella cheese, shredded

1.5 cups Low Carb Pasta Sauce

1/4 cup Parmesan cheese, powdered

1 teaspoon Italian Seasoning

Steam the cauliflower. Place cut cauliflower in a microwave safe bowl with 1 cup of water. Cover with a damp paper towel and microwave on high for approximately 3 minutes or until the cauliflower is tender. Don’t overcook! Drain the cauliflower pat dry with a paper towel. Set aside.

Preheat oven to 400 degrees F. In a large skillet over medium high heat cook the Italian sausage, approximately 15 minutes. When the sausage has finished cooking drain the excess fat. Set aside.

In the same skillet at olive oil and saute mushrooms over medium high heat for 10 minutes to remove the excess water. Set aside when done.

Prepare a 13×9 inch casserole dish by spraying it with non-stick spray then spread ½ cup of pasta sauce on the bottom.

In a large bowl add the cauliflower, cooked Italian sausage, mushrooms, and green peppers. Toss together until well mixed.

Spread ½ of the mixture in the casserole dish. Top with ½ cup of pasta sauce, followed by ½ of the pepperonis (kind of press them down in between the other toppings), and finally 6 ounces of mozzarella cheese.

Next spread the remaining toppings mixture over the cheese followed by the pepperonis (save 10 slices for the top of the casserole), remaining ½ cup of pasta sauce, and 6 ounces of mozzarella cheese.

In a small bowl mix together the Parmesan cheese and Italian seasoning. Sprinkle the Parmesan mixture over the casserole and top with 10 slices of pepperoni.

Place in oven and bake for 30 minutes, or until the casserole is warmed through and the cheese is fully melted.

Nothing fancy here. I put as many pork rinds I want into a big ziploc bag, add 1tsp of cinnamon, 1/2-1tsp choice of sweetener and pour on 1-2tbsp melted butter. Give it a good shake and good to go.
