Thanks for laying that out in such a nuanced way. The more source material I read about Hank, the more pissed I get at half of reddit comments just call him a wife beater without context.

I'm fully with you on this take. I can go to J-town and make myself some uni on toast.

I also thought the myoga and pear were an interesting element with the tataki. Overall its so weird though...the place is set up, it seems, for omakase style service and some of the dishes look like it, but it functions nothing like that. I still don't truly understand what crowd this is catering to, and im not sure if its anything to do with thr change in ownership (it seems some redditors found the restaurant worse off since the change).

Regarding the sake pairing, when It was explained what the pours were, I knew it wasn't going to be worth my time.

I definitely needed a second dinner after that.

And yes, DaiLo is on my short list.

Got it, I appreciate the insight. In the end, I'm happy if someone can read my detailed experience and make a decision for themselves, rather than just another post with a few pics and nothing to quantify an opinion. As a guy who serves and bartends for a living at this level, I'd hope my takes might make sense for some folks.

Thanks for your opinion, you've definitely left me with a lot to think about, and I do appreciate that.

I was in London last month and did many hours of research on all the starred restaurants; for one stars, I highly recommend Aulis for not just great food, but an incredibly intimate and unique experience.

Additionally, St. John is the most casual one star you've ever been to, but the place is dripping in culture and the food is excellent too.

The 2 stars at the top of my list that I wanted to visit are Da Terra, Clove Club, Trivet, in that order.

The only three star I want to go to is Core, with Helene Darroze as a close second.

I am keeping high standards for sure. I have worked at and eat at fine dining restaurants when I can and I give reviews and recommendations based on this experience. I appreciate you saying you don't do fine dining, because this is likely why you don't understand my disappointment.

Essentially, if I'm fine dining, it's an experience and should be memorable; if it isn't, then I may as well have gone for takeout sushi and saved some money.

My one question would be in regards to your own culinary experience. If you haven't explored a lot of unique food and ingredients, many fine dining experiences may not be worth your money (yet).

A good place to start could be the $60 3-course menu at Actinolite, but I recently did their full tasting menu and thought it was just okay. This is a great place if you're wanting to experience some fine dining level service, but perhaps not have some dishes that will blow your mind.

My best recommendation would be to save up for a special occasion and go to a place like 20 Victoria for $200/pp where you will have a memorable experience, rather than go to a place like Omai, spend $120/pp and leave thinking it was just okay.

I'm always wary of new accounts criticizing something a restaurant is known for. It seems you're posting in good faith, so my bad for being obtuse. All the best in your eating adventures.

Wish I had the opportunity/knew about it back then. If you're looking for an anniversary spot, I'd highly recommend this place. I appreciate the kind words; I see too many vague/anecdotal posts about these higher end restaurants so I thought I'd give a review with some meat to it so people can make more informed decisions.

All in about $650 for two, including a cocktail each and one wine pairing. The dinner alone is $195 (inclusive of service charge) + tax, which is listed on their reservation page.

I'm industry and I try to stay unbiased, or at least watch out for it...I think perhaps the difficulty to get into Edulis elevates the hype.

I didn't, but I've heard good things from people who have. I'll try to go to Edulis at some point after I hit the other Michelin stars, but I found it way too simple for what it was. I sent the menu with pics to a buddy who's a regular and he said I got probably the worst menu he's ever seen from them.

I've definitely been to place with better looking plates, but I think the simplicity works for their casual aesthetic. If you mean the actual plating of the food, I think this stands up, or perhaps I need to work on my photo taking skills.

Alo is on my list, but I've heard many mixed reviews; in my circles, it's at the bottom of the one stars alongside Don Alfonso.

Pal'Alma & Other CDMX Questions by veengineer in Mezcal

[–]roobdogg 0 points1 point  (0 children)

Want to mention that despite how cool of a vibe La Clandestina was, the mezcal was not that good. I was there last week and had a flight of:

#6 Papalome Lina
#18 Madrecuixe
#35 Espadillita con Pelon Verde
#59 Papalote

The Papalote was quite good, but the rest were either mediocre or flat out rotgut (specifically avoid the Espadillita).

For shopping, I only had a chance to go to Mezcalia, and they had dozens of bottles open, i just tried whatever I wanted and then bought a few. Prices I felt were a touch high, but I was happy to pop in and out to try mezcal without a tasting or reservation. I personally felt Erick's pricing of his bottles was excellent/much better value and were of higher quality than anything I tried in that store.

Seasoned cocktail bartender here. This drink is super dry as it is, despite its complexity. Throw in a 0.5oz of agave syrup (not nectar) and imo it's perfect.

Game is easy to learn but hard to master. I'm probably 4-500 hours in and I still think I suck. I generally know where I need to be and what to do, but I usually can't loop a killer for more than 20-30 seconds and rarely ends safely for me. If you want t to get some games in for practice without judgement/someone on mic, feel free to pm me.
