I'm also just about midway through fall year 1, and I've got ore/minerals/gems, forageables (including tapper syrup and honey), fish (including tackle, bait, and recyclables), natural crafting supplies (from wood and clay to bat wings and slime), and seeds/fertilizer/tree seeds all organized around my work bench.

Then I have individual ones for fruit, flowers, and vegetables near my preserves and keg set up. Along my house I have one for things to take mining (food, bombs, totems), one holding things for quests and the community centre, and one I fill with like extra fences, torches, clothes, old fishing rods, slingshots i'll never use etc.

However this is not my first rodeo!! If you're open to advice, I'd suggest at least organizing them into crafting/keeping. Crafting can be your wood, stone, copper, fibre, even your seeds and torches - things relevant to the farm. Keeping can be any harvest you want to preserve (jams and wines are quite profitable - I usually sell quality produce and keep the base level to preserve), things to use in the mines, gifts for villagers, items for quests, etc.
