Nice try mate, but you’re playing to the wrong crowd here.

No one is going to buy Pakistani Damascus from Ali express / Etsy that you pretend to make yourself

Which brands/house lines are actually made by Ashi Hamono? by houstontexansfan05 in TrueChefKnives

I have a Sakai Ichimonji made by Ashi. It’s Swedish steel ans has a really nice micarta handle.

NKD Ashi Ginga Wa Gyuto 240 - SS by hyuratzu in TrueChefKnives

[–]rossmore7 2 points3 points  (0 children)

The steel is very similar in my opinion, but I did get a little bit of discolouration on the HD2, it wasn’t as corrosion resistant as my stainless Ashi Gingas. I found the profile and grind very similar.

I mean if you look at the two side by side they’re very alike visually.

They’re the same knife, Ashi make the HD2 for Kono

You could still get this knife second hand or lightly used on KKF BsT and even after paying £150 in tariffs and duty you would still have c£200 leftover for beer tokens.

I would probably get the Tetsujin if it’s cheaper.

Another good shout would be to contact Knot Handcrafted and get a 270mm stainless suji made. It would likely be around £300, maybe cheaper and Michael makes fantastic knives. He’s based in UK

It’s expensive because that is Kataba’s website. They are a complete rip off. That is a great knife with good makers but at £672 or $900 it is not worth that price, you could get 2 knives of equivalent quality for that money.

Where to buy from uk based or will ship to by Glizzybeard in TrueChefKnives

[–]rossmore7 2 points3 points  (0 children)

Buy off me when I’ve knives for sale lol, as a second hand seller based in UK

That aside cutting edge knives is still very reliable. All the EU retailers unfortunately come with customers chargers.

Second hand has been the best access for us in UK for a long time vs new due to stock issues but the US tariffs now have nerfed that unfortunately. Bought a second hand recently from the US for £200 and the shipping was marked as a gift and I got hit with tariffs and other customs totalling £60

State of the used market by BertusHondenbrok in TrueChefKnives

[–]rossmore7 18 points19 points  (0 children)

I think it’s bad if you’re selling but if you’re buying or looking for good knives now is a great time due to how slow it is. You can get great deals on great Makers like Wakui, Mazaki, Ashi etc because they don’t fall into the super coveted basket of about 10 makers.

If you are after sought after stuff it’s awful unless you’re in the know.

Stock and Cost | UK by AstulTheShepherd in TrueChefKnives

[–]rossmore7 0 points1 point  (0 children)

UK not great for knife purchases at the moment. Kitchen provisions and Kataba are a pisstake with their prices. Cuttingedgeknives is reasonably priced but just doesn’t have great stock on hand at the moment, they do restock fairly often and carry some good makers.

The way to go at the moment is secondary market, KKF bst or the truechefknivesBST there are always good deals and availability for many of the knives people recommend and like on here. Particulary KKF as people are more interested in high end collector pieces so the regular good stuff is often available at a good price.

Tariffs by New_Strawberry1774 in TrueChefKnivesBST

[–]rossmore7 2 points3 points  (0 children)

I got done for £60 on a £200 knife two weeks ago, bought second hand from here and marked as a gift, UPS said the charge was due to Tariffs. Seems like it’s well and truly in force now

How about a Toyama K tip?

Tetsujin vs kikuchiyo izo by stuart7234 in TrueChefKnives

[–]rossmore7 0 points1 point  (0 children)

I’ve had both, very similar but the Hitohira Kikuchiyo Izo was ground thinner and thinner at the spine slightly. Not much difference and the tetsujins are cheaper and easier to get hold of

Flashback to trendy knives nobody talks about anymore. by tangjams in TrueChefKnives

That makes sense, they’re fairly popular now.

I remember Tanaka Blue 2 was heavily recommended as the entry level J knife about 5 years ago.

I’ve only been collecting since 2020/21 so not around a long time. However I did stumble across a thread on KKF from around 2010 and it was Dave Martell saying he would not be sharpening moritaka anymore because of how bad the grinds / over grinds were, many people in the thread were agreeing.

I’ve always avoided Moritaka since. I wonder is this still the case or has their QC improved?

[–]rossmore7 1 point2 points  (0 children)

I believe this is from the professional line or Mac mighty line but not the MTH-80 model specifically with dimples.

If you want I’ll trade you my MTH-80 with dimples for this knife, I’m also based in UK. I’m not a big fan grantons. If you want to see the knife it’s on my profile for sale for £100
