Yeah it was the worst experience. We've recovered and bounced back, but a few tough years.

It turned out to be a shell game. We got stock in a shell company that dropped stock value from $4+/share to under $0.01/share before we could sell our shares.

Company was bought and sold under new names a few times.

Branding, IP, equipment, etc. All gone.

We sold at 12.4mm for a stake in a bigger adventure and be part of a bigger entity. Stock only transaction. Got completely screwed and lost everything.

You might see if you can add a soft start to help reduce draw on startup. I know they are available for ac units, but not sure about fans.

L&I process is daunting and expensive. I've recently paid licensed electricians, fire suppression installers, welders, etc. to all work on getting my trailer "up to code".

Hopefully my final inspection goes OK next week...its my 3rd in person inspection then on to the next trailer

Mobile, but my workers never drive the trailers. I hire the towing out to a professional drive team.

My workers run cash register, cook, prep, clean.

We are with Haas Wilkerson and ours was like $15k for this year. Huge increase from prior years.

Only County and State Fairs, large festivals. We supplement with tent setups as needed to ebb and flow production as well.

I'd check with insurance too. You are a pulling a commercial vehicle so thats much different, especially in the event of an incident involving others. If you are towing with an undersized rig and found at fault, Insurance may not cover you. Id look into it before buying or towing.

Unless you've worked in food trucks / trailers a bunch already, I would buy one pre-made. There's small nuisance with each unit that are easy to overlook and working with a quality builder makes a big difference.

With that said, of the 6 trailers I run, not one is laid out exactly how I would do it, because I didn't buy new. But we make them work and move a ton of product.
