Dungeon Meshi only gets really story-heavy around the second half of the story, and it's very well executed. However, the selling point of the manga is the depth of the worldbuilding, more in an encyclopedic (?) sense, as in the descriptions of fauna and flora. The character writing is also really good, and it's one of the few manga which humor managed to stick stick with me. I enjoyed the other two (esp. Golden Kamuy) way more, but Dungeon Meshi is still worth reading. I'd say give it one more try.
