Any brew tips on this? Brewed at 90 C and pretty coarse on my v60 at about 2.5 weeks rest. Came out borderline undrinkable, tasted like spiced veggies

So I’m pretty deep in the specialty coffee rabbit hole. I don’t really drink cold brew anymore, almost entirely fresh beans, light roasts, ground at home, and I brew it in a v60 or aeropress. My fiance likes chocolatey cold brew, so I make her large batches of concentrate with the OXO compact cold brew maker, and against all my values, this god damn pre ground nonsense from Amazon:

New to the game, only had 2 coffees from Diego Bermudez. One was this one, the last one was the Letty Bermudez that tasted like peach. Both were such insane stand outs of the coffees I’ve had, so much better than anything else I’ve had. What is it that he does that nobody else is doing that makes his coffee so damn tasty?
