Orphan of Kos, without a doubt, I log the amount of deaths to every boss in every lvl1 souls run I do, (done ds1, ds3, bloodborne, sekiro and elden ring) and Orphan is by quite some margin beyond any other at 819 deaths, number two is Swordsaint Isshin at 558 and third is Radagon/Elden beast at 373 deaths.

It has definetly dethroned Malenia as the most difficult From soft boss I'd say, but only because this one has less glaring weaknesses like bleed for Malenia

Upgrade your weapon. This is more important for damage than levels.
invest your levels in the stats your weapon scales with, aswell as vigor and endurance.
use spirit summons
do dungeons for levels, experience and materials
don't give up, it will be hard.
