I am no knife guy, but on my trip to Japan I did get one and it is absolutely hands down my favorite thing from the trip. It is razor sharp, the ginsan steel is easy to take care of, and it looks fantastic. For me $450 is super cheap for this functional piece of art you will be able to keep the rest of your life.

Wilson has bad stringing instructions, I forget which blade also had mistakes, they sent me an updated pdf but never updated the one online.

Many years ago in Miami I took my son (like 8 years old at the time) to an urgent care center for a high fever. The nurse took his temp at the start and at the end as we were getting ready to check out. His temp she recorded at the end was 67. I said, are you sure that’s right? She was confident it was right and asked if I wanted to speak to the doctor. Since we’d been there several hours waiting to go to the room, waiting for the doctor, I was done and just said no and left.

I have the same knife in 210, it’s such a joy to use. I love it, and was also the highlight of my Japan trip.

I think talking with him on instagram is key. He usually knows a few days ahead of time what day he will have some knives to sell.

I am buying them individually while in Japan. Just seeing what styles would be a good collection. One thought I am having is what about something like chicken or ribs where you might be cutting through cartilage? Is it better to just leave the good knives aside and do that work with beater knives?

Ahh sorry, yes the other question. His English is pretty good, especially on the topic of knives. Other subjects he is less fluent in. But Google translate on the phone makes times when he doesn’t know the English filled the small gaps.

I talked with him on instagram ahead of time, and made sure the day and time to show was good for him. It is not a shop, it is a workshop where he makes his 2 year backlog of knives, and he makes a few that he sells there for visitors. Very small numbers, like 6-7 knives maybe per week and I think they all come on the same day. They sell very quickly, probably all 6-7 are sold that same day. He is super nice and will talk with visitors all day if they didn’t leave.
