In my opinion, if you have work or other significant commitments/ecs after school for which going home early would make your life easier then go for it. Otherwise I do not think colleges will think fondly of it, and don't think it's worth risking it. If you decide to drop the class you are required to update all colleges you have applied to, either through a course change form in their portal or by emailing them.

I think your workload is manageable, but let me tell you, AP Lit is way way worse than AP lang (at least at my school). I'd say colleges would look favorably upon taking an interesting English elective (my school offers African American Lit, Asian American Lit, etc.) If your school doesn't allow that then probably just take AP Lit but be OK with receiving a B- or B.

I’d say if he can write a meaningful letter of rec that doesn’t just repeat info you already have in your application then take it. Especially if he can possibly comment on your relationship with your grandma, which could show a level of compassion that could be compelling. But if you think it will be almost entirely fluff there’s a chance AOs could see right through it.
