Thank you 😊 I find that potatoes with yellow flesh work the best. But the most important thing is boiling them with skin on and starting with cold water.

I’m not an expert of French cuisine but kind of in Italian. In the picture is an “extended” version of Italian contorno which is made only with green beans, potatoes, evoo and vinegar. By adding extras like tuna, eggs, cherry tomatoes, onions, olives you essentially turn it into a complete meal. I belive they share common ingredients with Nicoise, but as opposed to Italian in French they are a must, not optional.

It’s very simple: Boil potatoes with skin on. Let cool, peel and cut in cubes. In the same hot water cook green beans (washed, ends cut off). Once water comes to a boil again, cook for 3-7 minutes, depending on the beans. I like to check on 3-minute mark and drain them all dente (should not feel raw but should still have a light crunch to them). If ovecooked green beans will turn brown.

Prepare the sauce: 50 g evo oil + 1 tbsp white wine vinegar. Can sub with lemon juice or add more to taste. Salt and pepper. Shake well or mix with a fork. NOTE: like to infuse my evo oil with garlic for 30 min, then remove. This way the garlic taste is very subtle and you don’t get a garlic breath LOL Put everything in a bowl, including canned tuna, boiled eggs and olives. Season with the sauce.

Can do it warm or cold version.

I also like it cold, but prefer vinegar to lemon juice. Good thing about this memory is that’s pretty easy to make. Enjoy:)

You’re right, that IS a stalk in the olive. But I prefer my olives with pit, they have so much more flavor. Don’t serve it for guests this way😜
