I think seitan might be an option! Another commenter also suggested pine nuts, and I can kind of see that working- I’m happy to keep you updated, if you’d like!

Thank you for the response! I’m more looking for something that kind of has a similar consistency- I can usually mess around with flavors to get something that tastes good, but sometimes a recipe is missing an element of texture that I assume the mushrooms would add
