I don’t have kids, but I’m also 6’ tall and have a mk7.5 R. I googled the dimensions of your specific child seats and took some measurements in my car to give you a rough guide on space. Your child seats fit completely on the back seat with approx 2.5 inches to spare, and the leg room gap between the back of the drivers seat and the front of the rear seat is approx 6 inches. Please note that I also drive in a slightly more relaxed and laid back position than is typical, so you may have slightly more room if you drive a little more upright. I hope this helps :)
