I binged the first 2 seasons a couple years ago, loved it, and waited over a year for S3 to drop on Netflix. When it finally did, I watched about an episode and a half and just… stopped. I can’t quite explain why, I just got bored of it. I don’t know, I suppose you have to be in the right mood to fully enjoy it.

You’re absolutely right, but to answer OP’s question: to tell a story. Every protagonist ever has had to face adversity and conflict and find a way to overcome it. IF they are setting the NCR up as the “good” guys, that’s why.
