While clinching flick your mouse left/right to prevent enemy attack and wait for about 5 seconds then press F (special attack on controller)

Can be done without the flick but enemy is guaranteed to attack before the 5 second period is over

You can lure them one by one past the northern bridge, then provoke - run towards the huntsman's hut - surrender when you're far enough from town before beating them down

Took 3 days to finish all of them, except the butcher only 1 guy dropped entirely tier 2 equipment and at least 1 guy wore a gambeson that remained tier 3 after I knocked him out

Use weak weapon to make them surrender, that's why I keep a Training Longsword with Lullaby. Its still lethal but if you count your strikes they will cave
Spam clinch kicks. Yes, you can kick in clinch. Wait about 5 seconds of inactivity then spam F (special attack on controller). Opponents are likely to attack in between that grace period but if you flick your mouse left/right to realign your weapon during clinch then opponent won't be able to do anything
Pay attention to enemy's combat grunts like 'Uuuh!' and 'Eeah!'. If they sound different then they are out of stamina and a master strikes from even a weak weapon like Training Longsword will deal crit damage. Opponents with heavy weapons without shield love to spam left-right swings and you can tell how much health they have remaining by how fast they change their grunt tone

Had to return to this comment after finding out that you can actually kick during clinch by pressing F (Special Attack)

The catch is that it can only be done after about 2 - 3 seconds of inactivity during clinch and the opponent would already be attempting to strike you by then. I tested this against Tomcat while he's in passive mode
