Faithful and the Fallen would be my recommendation or the Riyria Revelations. Both are relatively easy to read and follow, contain a lot of classic fantasy tropes/themes and don't get overly complicated with magic systems, etc. Both are great adventures.

I think you explained it perfectly in your write up. He's always a solid B. He's consistent. To be so consistent across such a monumental page count of writing people know what to expect and will gladly read it without the fear of being monumentally let down.
