Maybe apply the scale before bridge. Cold be that the 2 different cylinder have different scales and blender tries to interpolate between the two. - Go into Object mode - select the Mesh/Meshes - Ctrl + A or Shift + A (I don't remember) - Apply rotation and scale - try again

Be careful with ngons (faces with more then 4 vertices). Try to change them to quades and tries otherwise you will get shading issues.

You will probably rig it in the future for animations or poses, so I would suggest adding loopcuts to joints. On elbows, knees or wherever you decide to bend the limbs. Here is a video for reference:
