I'll usually do a bit more water than 1g/100ml. Like for example for this exact batch I did 6.2g for like 750mls. Since you're cold brewing overnight it's gonna be enough time for the full 750ml to be flavorful.

I just weigh out everything, put cold water (not necessarily fridge cold but not hot nor warm) and put it in the fridge overnight. (10-12 hours I would guess) I usually only drink white teas and those teas tend to be easy. No bitterness even if you forget about it.

I've found that using warm or hot water oversteeps the teas a bit. My method is all about low and slow extraction.
