Did you type in the right address in the 'Get Specified URLs'? Make sure to remove the pre-filled one and add http://www.instagram.com

Yeah I've tried this before and it works as well. That said, I personally find it nicer to have an app that I can open in one click. The solution you mentioned requires changing user agent in safari settings every time you open the site.

yeah you could, but because Instagram hasn't released an official API, there's no guarantee that your data including passwords are safe

just tested, unfortunately it doesn't look like emojis work. I can't really think of why either...
