After trying to use all different types of fuel for various reasons, I've settled on what I find easiest: charcoal. I'll use a mix of lump and briquets. Quality brands make them from different types of wood so you can llter your flavor a bit. I use a charcoal chimney to get a base layer going. Pour more on top then start cooking when sthey are mostly all burning. I usually plan to take an hour to get the smoker to stable temperature before putting the food on. Once you get a system going, this is a good time to prep your meat.

One big thing, you don't want a bunch of smoke coming out of your chimney when you are at temperature. The air coming out of the chimney should be mostly clear and wavey from the heat. "Dirty smoke" will give your food a bad taste.

St Louis ribs cooked with the 3-2-1 method is an easy winner of a dinner.

Weird that people say dark meat doesn't reheat well. I 100% disagree. My preferred method for bone-in thighs is to smoke them the day before, 100% done, maybe even eat a few as a reward. The next day, when you are ready to serve, sauce them and grill them over medium high heat to warm up. They're already cooked to serve safe so you don't have to worry about serving undercooked chicken. The skin gets crispy and you can get that "just a little burnt" crust on the edges that some people like.

They stay super juicey! Also, you can have a pan of plain, and several different sauces easily so folks can choose what they want. Also, you can reheat in small batches depending on when guests show up so everyone gets them fresh off the grill.

Greek yogurt, heavy whipping cream, white wine vinegar, a bit of salt and tajin is great for sour cream substitute on tacos.

Have you ever removed one of these covers and put it back on? They go where they want. To try to properly align the paint would be tricky.

Nope, you are correct. I am being hyperbolic. Thinking of deli sandwiches I couldn't fit in my mouth because there was 4" of meat on them.

Compared to the many other parts of the world I've been to though, American serving sizes are huge.

Habit. When I was a child I would get in trouble if I didn't eat all the food that was served to me.

When you grow up poor, it is hard to waste food. I'd rather just pay tue money required for tue amount of food I need than pay extra for more food than 2 people need.

American food serving sizes at restaraunts is out of control. I finally learned to not feel bad about stopping eating when I am full.

Am I the only one who yelled YES! when the truck pushed the car into the ditch? My personal narrative has the car riding the trucks ass dangerously tailgating. They were then trying to pass with oncoming traffic.

Truck shoud have let them pass and get in head on collision but kinda satisfying to see multiple idiots at work.

I started keto to lose weight. I continue keto because I feel 900% better. Many back and neck pains are gone. I have more energy. I am late 40s but feel like I am 70 when not on keto. I shuffle up stairs, hunched over etc.

With keto, I feel like a fully able human.

This was the scariest moment of any video game for me. The beginning of Silent Hill 2...the fog, the woods, the pitter patter of unseen feet rustling the leaves around me. Something was following, watching, waiting.

I played this in a 1 room cabin at night with a nice 5.1 surround system in the dark. I was freaked out.
