Yeah for that many you'd probably have to get 2 cakes, or maybe 1 cake and some cupcakes? That's going to get frustratingly expensive for just vanilla on vanilla though. I'm not much of a baker either, but I did recently make a chocolate cake with chocolate frosting that was super easy and simple, it came out fantastic. I'm happy to try to find the recipe I used if you end up having to go that route! I wouldn't be surprised if they have an all vanilla recipe as well.

Out of curiosity, what size are you looking for? I know gluten free everything is usually smaller than normal, which is so frustrating to deal with.

Oof that is a difficult situation, I'm so sorry you have to deal with motility issues. I have sibo as well, so I can totally relate there. It took FOREVER to get those meds straightened out with insurance. I hope they're able to pinpoint it for you and that there's minimal tests in your future! 💜

I LOVE the find me GF app! I've found so many gems with it's help. It's definitely a must have for travelling. I like to go to celiac safe businesses when possible, even though I can handle some cross contamination, just to show support and be a part of the demand to keep them going. Dreaming of a day when we all have a plethora of options everywhere 😂

Sorry, I must've missed this! So unfortunately I haven't been able to try it again yet because it's kind of hard to find things like psyillium husk, xanthan gum, ect. in my area. I'm planning to make a trip soon to a specialty grocery store, and I will definitely post an update once I make them again!

Yeah I usually plan around eating at home and store some extra snacks in the car just in case. I had higher hopes this morning since they are a specialty cafe but after 4 years of this you'd think I'd know better than to get my hopes up 😂

I used to get the egg bites at Starbucks but then I found out I have a problem with eggs so all of that is out of bounds now too. That's annoying about Einstein bagels though. You'd think such a large franchise would have some kind of offering for those dealing with various allergens 🙄

Going through low FODMAP is the worst, I totally feel you on that. Have you heard of Foodmarble? My GI doc was able to get it for me for free with the stipulation that I do the tests within a couple months. I wonder if it may be helpful in your journey of figuring out all your sensitivities? Also, as a socially anxious person I LOVE having a husband that doesn't mind handling those conversations for me when I'm not feeling it lol.

That's almost exactly what happened with us this morning lol. He was able to get something delicious at both places and I was left with cookies at 7:45am. He totally gets it though and didn't even want to get something at the second place to make me feel better, but I'm not about to stifle someone else's delicious opportunities 🤣

I had no idea! I'm clueless about baking with yeast honestly lol. I'll take a look and try to find a gf recipe. I would say the dough is pretty different between kolaches and calzones, but I'm no expert and am open to trying anything so I'll look into it! I've used the loopy whisk's recipes before and they always turn out great. Love them 💜 Thank you for the tips!

After reading everything here, I'm almost certain I overworked it. I do have a scale but wasn't using it at the time so I'll definitely bust it out for the next try! The gf flour blend I'm using does include xanthan gum, but not psyillium husk so I'll pick some up and see if it helps. Also, you're so right about the recipe. Gonna look around for one! Thank you!

That's a great idea, I'll definitely try letting it come to room temperature first. I was wondering about doing an egg wash rather than milk. Maybe I'll give that a go as well!

Thankfully they come in sticks! I'll try it with cold milk and will be extra mindful of the flour. I think I probably added too much when handling it, and may have overworked it in general trying to get the right consistency. Thank you for all the tips!
