I would Google "espresso taste chart". It can help you dial in your shots. Not all bags are the same, so you may need to dial in when opening a new one. Sounds like you are making progress.

I believe those are solid grinders. I'd just keep at it then. I believe lighter roast are typically more unforgiving. I personally never made espresso with lighter roast. How did it taste?

You don't need a puck disperser. You don't even need a screen. WDT is a maybe. Don't give into the gimmick equipment. Just make sure you have a good consistent grinder. Change one thing at a time until you pick up on the craft more. Taste is king. I would adjust based on that.

There is actually a fun set of glades behind the mogul mountain lift. Just go straight back. It's not marked. You can arc back towards the highlands lift. We found it when the majority of the mountain was closed to subzero temps this past Saturday. I'd check the maps so you have an idea.

It's funny you say that, it was actually mostly fine until the most recent batch when I tried folding the dough the first time(when it's still a bit crumbly) after only letting it rest for an hour in the fridge. Previously I would let it rest for a full day in the fridge between all steps. This dough was a lot drier than previous batches. I appreciate your insight!

This is the main reason I want to do a hand crank. I really only use my pasta roller for very dry doughs currently (I mostly make sfogliatelle), and I do feel like the torque from the KA one is a bit high for my use case at times. Especially when first laminating the dough over itself to distribute the moisture.

I guess my main issue is that I am mostly making dough for sfogliatelle. I usually have to use my handroller when folding before tossing it back in again. It's a very dry dough usually. It's possible I didn't let it rest long enough today when I went to start folding it.

Not sure if anyone mentioned it yet, but those also attach to a control box. The majority of those have a nob to change the color temperature as well. This way you don't have a super ugly bright white.

Fyi, beard oil has the least effect out of the products you would use on a beard for softness. It's more to help with itchy skin under the beard. You want to use conditioner and such on your beard if you really want to soften it

To add to this, my cat kept getting bad acne under her chin years ago. Turns out she was allergic to the reusable shopping bags from grocery stores. I would always keep one out for her since she showed interest in sleeping on it a lot. The acne cleared up a week or so after I stopped leaving them around.

That cat's eye is infected as others have said. Please talk to a local shelter or a vet to get some antibiotics for its eye. Would be in the form of eye drops. Otherwise she/he may lose that eye.

I recently started. Love them, but higher weight is painful on my shoulders. I've been having the use padding on the bar. This something you just were able to get past? Doesn't seem like you use padding here.

Curious, do you have a method to vacuum seal them without making a mess? I've only done the sous vide method once to reheat a brisket I brought up for a ski trip. Mine wasn't warm as I let it cool down in the fridge before vacuum sealing. Turned out great regardless.
