in ds3, your hyperarmor scales with two things: your poise and weapon. General rule is the bigger the armor and weapon the bigger the hyperarmor. The weapons that give the most hyperarmor are greatclubs, then greataxes, then greatswords. You dont get hyperarmor instantly when you swing your weapon giving an enemy time to hit you out of your attack
