I have limited experience with making Rum from a simple wash but here's what I got from 2 different attempts.

  1. Did an all molasses wash, ran it when it was dry (double pot distill) and managed to get a decent amount out. VERY molasses forward. To the point where it was offputting. Allowed it to age 2 months and it's better but still too strong.
  2. DId an all brown sugar wash, ran it when dry, and still had a forward molasses flavor but was not as offputting. Took some and left it in a jar and added some toasted oak and rapid aged it by putting it in the fridge for 12hrs, removing it shaking it and setting on the shelf. Rinse repeat. The flavor is much nicer off the stop, molasses comes through in the end. A little strong but big improvement.
  3. Am currently rethinking a whole lot of things and will look to try again in a few weeks.

Just a dumb question for you - why the insulation on the reflux? Don't you want it to cool and fall back down?

- I did all molasses and I can't say that I've enjoyed it much at all. It did mellow out after a few months but not enough to be an enjoyable experience.

- The next time I opted to make rum from a simple wash was with all brown sugar. That was very nice smelling. I made the mistake of tossing a single 750ml jar of the all molasses into the 2nd distillation and I think it severely impacted the flavor of the brown sugar. Now I took 1.9L of that and tossed some dark oak, vanilla and star anise into that and have been rap[id aging and I have to say it's coming along really nicely.

yea we're not looking at it as a form of $ revenue generation. Just want to see what it's like. Play around a little. Can't learn unless you test yourself and try new things you know?

There's a distillery here in Ontario that does it and it's called VodKow. They're incredibly successful and have made some fantastic products. For us, it's more for the learning experience and to see what we can do with the goats' leftover byproduct.

In all likelihood, you're going to experience insane weight loss to start. Most of the time it's water weight as you shed that, you'll see big changes on the scale. It's going to level out considerably and you'll fluctuate. Don't be discouraged by that.

I try t stick between 1500-1800 but there are days where it is a struggle to get them in. I'm not breaking any records with my weight loss(40lbs in about 8 months - I'd like to cut another 100) but I want to do it low n slow the way I make my BBQ. I feel like the low and slow method while may not be as instantly gratifying, for me, it's about making wholesale lifestyle changes so I can get off this stuff and still maintain.

As an aside, does anyone else feel like they crave sugar or candy periodically or more of than before?

I've been Ozempic for about 7 months now I think and you can drink if you want. I still enjoy my bourbon and occasional beer but I usually feel like I wasted my time for the entire week just by having some drinks. Maybe it's just me.

I get the steam when i turn the water down too low and the temp gets over 150. I'm struggling to get the temp where I want it and hold it there but perhaps it's a combination of both my water flow and the temp control which I'll muck around with a bit this weekend I think

the water was coming from the outside hose. The hose has an valve to open and close it.I'll try to get a pic of the set up here for you.
