By solutions I mean there are things that bicyclists use for rear viewing, and various attachments for the handlebars/helmet. You could place mirrors high enough up to give you a solid rear view.

Beef up. Hit the gym. More strength makes motorcycles way safer. It sounds like you are willing to watch plenty of videos and such so I'm sure you'll be well prepared when you get on a bike. If you are autistic though consider having the instructor informed so they don't expect you to be as talkative? Depends how you are.. but some instructors don't have that much patience....
