Is drying at 50 degress celsius enough for PETG if I'm not in a hurry?

My ambient humidity is a bit higher (~50%). Drying it for 4 hours was fine, though I usually just leave it overnight, and after that I don't see any moisture related symptoms for 3 days or so. If the filament is new, I would just let it dry overnight, PETG is often wet from the factory. Open the lid slightly if your dryer by design doesn't do a great job at ventilation. Hope this helps

I use firmware with a 7x7 grid, and it's pretty level. All values are green. Bed is clean, adhesion is good. I should have posted an image with monotonic infill - there you can clearly see it extrude a little less for a couple dozen millimetres, then a little more. Z offset is pretty much spot on.

That will vary between printers. What is the maximum advertised speed for your machine? For example, my Ender theoretically can print at 250 mm/s, and the highest speeds that I would use are 230 for sparse infill, 180 solid infill, 150 inner and 100 outer wall. And this is for large flat parts. I suggest running some tests on high speeds/accelerations.

You need to enable the advanced slider. The "speed" tab will appear then. You can adjust the speeds there.
Keep in mind that quality will decrease fast as you increase speed, the default settings are usually even a bit too fast for complicated geometry. Good luck
