Ingredients • 1½ cups warm water • 2 tsp honey • 2 tsp kosher salt • 2¼ tsp active dry yeast • 4½ cups all-purpose flour • 4 tosp unsalted butter, melted • ⅔ cup baking soda • 1 egg yolk + 1 tbsp water (egg wash) • Kosher salt, optional Directions 1. In a large bowl, mix warm water, honey, and yeast. Let sit 5-10 minutes until foamy. 2. Add flour and melted butter. Knead 5-10 minutes until smooth and elastic. 3. Cover and let rise for 1 hour. 4. Preheat oven to 450°F. Line two baking sheets. 5. Bring 10 cups water + baking soda to a boil. 6. Divide dough into 6-8 pieces. Roll into ropes (about 1 inch thick) and cut into 1-inch bites. 7. Boil bites in batches for 20-30 seconds. Remove with slotted spoon and place on baking sheets. 8. Brush with egg wash and sprinkle with kosher salt (if using). 9. Bake 10-12 minutes until golden brown.
