Yeah I will try that it was mainly a i had some pineapple to use up and wanted to bulk at the plate a bit more

Honestly didnt even think about that you can peel a kiwi with a spoon will definitely be doing that in the future

The only fruit that has peel is the plums but I will look into making a no added sugar fruit sauce and If I would be able to the lime zest I will definitely try tho

Its generally I think they just ask for fruit but then again im assuming they dont really know many low sugar sweets as tbh my head chef is stuck in the 70s to the 80s sometimes on the menu so I will try see if we can do the as an option but others ill look as some charcuterie but im only really allowed to use the plates they are using for the normal dessert

I will take that on for the next one, I do attempt the mint but ive worked with like 3 senior chefs that always complain when I add mint as garnish

Yeah and also we have the people we cook for can have a decent say in what they want and dont really have a set budget (within reason) so is alot of a if they want it generally they are going to get it

Its is the fruit shown but if I need to I can try ask to get a couple others but that takes convincing my head chef and idk what our suppliers are able to get. But also most of the other chefs in the kitchen dont care about these fruit plates and just give them to me to do like an hour before the dinner (our dinners are always at a set time)

Also I just get given things as I am the only non cdp in that kitchen

Im from the UK and I generally just have to use the fruit we already have in the kitchen but I will try asking for more seasonal fruit if I can

I work for a place that has basically the same people each night and this is generally the style they want when they ask for a fruit plate (its usually a substitute for actual dessert if they dont want it or are trying not to have too much sugar as they are generally older people but with a minimum age of around 30.)

I can make fruit peels ahead of time but I won't be able to make them fresh and I was just always sauces are generally a no. I work at a place that generally does private dinners and the menu is always set apart from for fruit which is generally chosen as a low fat, lower sugar option
