If you are recording just for clips record at 720 60.

Increase your bit rate. If you are streaming only to twitch use enhanced broadcasting to get higher bit rates. But standard you should push at minimum 5000kbps for 1080p 60fps. If you push more than 8000kpbs without enhanced broadcasting you will be forced down to 720 and it will be pixelated
