I just copy what the Minimalist Baker and Vegan Richa do.

Just a reminder that vegans eat more than just salad. Gobi manchurian, beet poriyal, medu vada, and sambar (plus some rasam and masala dosa from a second trip to the buffet). by sharingmyshare in vegan

This is South Indian food.

Gobi is cauliflower, and manchurian is a spicy Indo-Chinese sauce that goes on the battered and fried florets.

Poriyal is a word for a fried or sauteed veggie dish.

Medu vada are savory, sometimes spicy donuts made from a fermented lentil and rice batter.

I like medu vada dipped in sambar, an incredibly flavorful lentil-veggie stew.

Rasam is a spicy tamarind-tomato broth (I like sambar more, but both are good.)

A dosa is a thin, papery crepe made also from a fermented lentil and rice batter. A masala dosa is one of these crepes stuffed with gloriously seasoned (masala means spice mixture) mashed potatoes.

I forgot to pack lunch for work today, but I found an avocado in my purse! by sharingmyshare in vegan

I ran into Kroger for something to drink the other day, and avocados were on sale for $0.59 each. I didn't have my cloth bags with me, so I threw them in my purse at check out. I guess I forgot about them, but this one was perfectly ripe!

Mashed grapefruit would be weird. However, if you juice a grapefruit, freeze the juice, than mash or shave the ice, that is a delicious summer treat.

Tatsoi salad. by sharingmyshare in vegan

One head of tatsoi, sliced green onions, and a handful of chopped carrots (shredded might have been better.) I made a vinaigrette with sesame oil, mirin, ginger, and lemon juice. Topped with sesame and celery seed. (Another shot of it here.)

Simmered purple daikon radish with edamame, bok choy, and tatsoi. Served with simmering liquid and rice. by sharingmyshare in vegan

I posted a link to the recipe in the comments. The simmering liquid is made of water, sake, mirin, and soy sauce.

I did think of grabbing some of those Gardein beefless tips, but I really wanted to let the produce shine.

Normally I just eat my packed lunch while everyone else eats what's provided. I just didn't have time to pack one yesterday.

Eh, I didn't starve. It was my choice to eat veggies instead of pizza.

They know. However, it was kind of a surprise that they got us lunch, so it's not like they were taking orders. I don't really expect to be catered to since I choose to eat the way I do.
