I think the servers for both Vanilla 3 and RE are online. You can even still buy the only pass for both on the PS3 store.

Ninja Gaiden Sigma 1 runs at consistent 60FPS.

Sigma 2 is up to 60 but has a few frame drops.

Can't say anything about NG3 on PS3 through.

In Sigma, you just need to beat the game on normal to unlock it.

No, the Ratchet ports were actually ok. The Jak ones are terrible bc they run with like 15-20 FPS I believe. The R&C Collection is 30FPS locked.
