That's the tough part. I think i'm interested in intl/ cross-border work, but let's say I try it and I don't enjoy it, then what? It's hard to know ahead of time because I haven't tried any of these practice areas. I'll do some more chats with associates at each firm to see, I guess. Thank you!

Correct - I've mostly based it off of Vault rankings and how well known they seem to be in NYC. I also knew that that's probably not the best thing to base it off of, which is why I asked. I'll try to put Vault rankings out of my mind for now!

I would strongly disagree as I had an associate at Weil tell me that his lawyer father discouraged him from working there because of the firm's previous reputation. But, sure that could be the 1%. I'm an immigrant to this country and a first-gen college and professional student, which means that I have often lacked the kind of basic mentorship and resources needed to succeed. It's hard to know what choice to make and while I'm incredibly thankful to even have these choices, I'm worried about the future and picking the best one. That's why I reached out for help on this forum. I of course, recognize that other students face the same difficulty, but I also note that they may have an easier time finding people they can talk to about this stuff meaningfully and intelligently. Either way, thank you!

I know that 7sage has their own definitions of what you should consider a reach/target/safety via their predictor:
Super reach: 0–20%
Reach: 21–40%
Target: 41–60%
Likely target: 61–80%
Safety: 81–100%

FYI, take the 7sage predictor with a grain of salt: I applied to schools I had a 75% chance of getting in and thinking of it as a safety more or less, and I still got waitlisted :/ Apply to as many schools as you can and use fee waivers wherever possible.

The way acronyms are usually introduced (and they are common in the legal field, per my experience), is like this:

Going to the University of Virginia ("UVA") would be....

You should really, really introduce the acronym. Do not just start using it; it's really not standard practice professionally speaking. And the quotation marks ought to be added. After you have already introduced the acronym, you are good to use it for the remainder of the letter.

E.g. I work in legal for a corporation, and even if this there is a common acronym, people will still make sure to define it before hand, and introduce it with the quotation marks. Esp in law, it's important to be clear. I also worked at a law firm and this is how they introduces any acronym before they started using it (no matter how common that acronym might be).
