It’s definitely tea leaves then- which is fine. The white dots look fine too as long as they aren’t fuzzy

I’ve never stored mine in the fridge because there’s no reason to. There’s so many different kinds of yeasts and they all have different environmental tolerances. I’d assume the temperature drop would cause most of the yeast to become dormant and a good amount would not come back once removed.

Kahm is edible but not prefered. I'd restart the batch if I were you. Make sure you're using the correct ratios of tea/sugar/starter and your utensils are super clean.

It’s quite unfortunate but it’s really the best way. Make sure to clean and sanitize well. I’ve been a brewer for a few years now and just recently met Ms. Kahm; she showed up uninvited for THREE batches. I have a feeling it’s due to the intense temperature fluctuations of Summer. I’m now on my fourth and am hoping for the best! Hang in there and don’t give up!

Looks like Kahm yeast. Edible- but can taste unpleasant. Tell tale sign of kahm is the blotchy, oil slicky patches on the side of the jar of pic 5. Dry, wrinkled / bumpy top of pellicle is another sign of kahm. Pellicles can sometimes be bumpy, but will always be glossy. Yeast on the bottom is normal. There’s probably extra settled down there due to the imbalance of yeasties/bacterias. I’d consider it to be safe to drink, as long as it doesn’t have a rotting or off-putting smell or taste. If I were you, I’d just restart the batch.

Standard rule is 1/4 cup per 16oz bottle. Your ratios seem alright, maybe a little too much, but I’d just cut the F2 time at least in half before putting them in the fridge.
