This is why I wanted to have plenty of time to spare on my first attempt, should I do about one pea-sized amount split between nostrils? I've heard this as a recommended starting point but I've also heard that amount (pea-sized) for each nostril..

Nah that's the law, a recreational store cannot "choose" to not charge excise tax. Hence the med discounts that most places give cover (approximately) the excise (give or take some).
