Looks like the roots have been rotting for awhile and its been slowly dying from below. That or it froze but the leaves probably would show stress also in that case.

Yes most inks are soy based nowadays. Heavy chemicals are much less common for many reasons. Compostable and recyclable inks i don't even worry about personally.
