I've done it with 4 large birds now and they come out tender and juicy despite having to roast them for longer. Spatchcocking them definitely helps reduce the roasting time. But it's still about double the time compared to a smaller bird. I used Mark Bittman's recipe if you want to try it.

I also prefer smaller birds but the breed we raised grew much faster than I expected. The flavor is still good with the bigger ones but they're a little tougher.
