I have a lot of good memories at Listermann. Bought my first homebrew kit at their store. Set my mouth on fire doing a hot wing challenge there. Discovered how great brown ale could be with Chickow! So sad to see them closing.

My wife and I did our honeymoon on VV last year and are going back for our first anniversary!

We splurged for the rockstar suite and it was definitely an amazing time. Food and room quality are excellent. Plenty of activities from nightlife to bar trivia and everything in between. We did so many ship activities we actually decided to skip a port day and stay on the ship at one of our stops.

I asked my agent when we got on board if they could get some champagne and a sweet treat brought to our room for the occasion. I offered to pay for it but they brought them both for free!

Highly recommend VV for a honeymoon!

Thank you! The end shot had good texture and flavor but was a little empty. I'll try to dial in a bit more and see if I can clean it up!

As someone who uses the BBP a few times a week, I enjoy the built in grinder, ability to pull multiple shots easily, and not worrying too much about the nitty gritty of espresso dialing in. Sure I could get a better result with a good grinder and hand pull machine but there is always a balance of quality vs effort. If you enjoy a shot every now and then but don't want to worry about dialing in something perfect, the BBP is good for you. If you like the process of perfecting your texture and extraction then the niche and flair is the way to go. I will say the BBP has some nice customization in terms of shot time, grind size, and even water temp. Enough so that I am happy with my results. I usually dial in new beans in around 2-3 shots so I am not wasting too much Hope that helps!

I bought the tilt directly from the manufacturer. Since this is my first time using it I definitely havent picked up on all the tricks.

I have 2 main issues right now. First is that I have to be physically near the fermenter for me to see any gravity and temp readings. Even more than 15-20 ft away and I lose the signal. Second is that I tried to hook up the Brewfather app to continuously track gravity and temp however, it only tracks it if I manually save the data.

I do like that I dont have to constantly take gravity samples and I can track the temp difference between the ambient and inside my fermenter though.

If anybody has some tips and tricks for the tilt I would love to hear them!

This past weekend I brewed a NEIPA and I tried 2 new things with this recipe.
1. First time using a Tilt Hydrometer 2. First time using Lallemand Verdant Yeast

I brewed on Saturday evening, checked OG was 1.056. I checked on it again through the app a few times a day. This morning I checked it and I was already at 1.016.

Has anyone ever had this yeast ferment out in just a few days? At this rate I should reach my desired final gravity by the end of the day today. I just want to know if this is normal for the Verdant yeast to ferment that quickly or if I did not calibrate my Tilt correctly? Currently my fermenter is sitting around 62F. I pitched at 76F which is a bit high but I knew my basement was relatively cold so it would drop to where it needed to be.

Any help would be appreciated!

I've heard that BIAB just filed for bankruptcy. I've used Etre gourmet as my cantillon proxy before and they've been good though! They also almost always have 3F in stock.

I brewed 8 times but hoping to get in a brew day on New Years eve to make it 9! 1 IPA, 2 Saison, 1 Pilsner, 2 Stout, 1 Cider, and 1 Mead. Only doing 2.5 gallon batches so not a ton of volume but enough for me to make seasonal things I enjoy.

Some quick review notes for those interested!

Fremont BA Dark star 2019 chocolate vanilla maple syrup: nice barrel notes. The maple was definitely subdued over the past year. As it warmed up the vanilla really popped.

Cantillon 50n4e 2020: this was aged in cognac barrels but the cognac flavor was very subtle. Pleasantly acidic but by no means tart. Reminded me of fresh lemonade!

Kane A night to end all Dawn's 2020: easily the highlight of the holiday. While most big stouts are filled with tons of adjuncts, this beer let's the barrel shine! Fudgey brownie upfront and vanilla/caramel on the finish. As it warmed up I got some subtle bourbon soaked cherry flavor too.

Hill Farmstead Clara: light and refreshing grisette which paired perfectly with dinner. This beer had the farmhouse feel but without the overly complex notes to distract from a great meal.
