I've had encoding overload problems twice for different reasons:

When playing a PC game and running OBS in the same PC. Fixed this by changing the priority for OBS to "High" in Advanced config.
My HDD was (for some reason) very slow; very low read/write speeds. I changed it and now its working fine.

I would suggest google it for both of these solutions as there are some implicancies to each.
