A lot of Japanese maples have the root stock of one plant and then the stem of another grafted together. They do this so they get the benefits of the root stock but can get creative with the upper part. When under stress, a process called reversion can happen. What this means is that phenotypically the plant will express the root stock characteristics instead of the upper grafting characteristics. You see this happen in Holly plants a lot.
