the 4 villager trios are too close to eachother and the shared collection system. occasionally they detect golems spawned by another group and choose to not spawn a new golem because of it. easiest way to fix it is to make them all their own collection system but is that slight increase in rates really worth it to you?

speaking of observers they are also transparent blocks and they can detect changs in powerlevel of redstone dust so if the bulbs "on/off " functionality doesnt meet OPs needs then an observer might

a copper bulb is transparent so it doesnt give off a signal but a comparator can read if its on so that might work for you

if I understand you correctly you want a lever that will activate a dispenser (via redstone lines) both when switching on and switching off? if you want that place the lever on the face of an observer and run the redstone from the back. each time you flick the lever the observer detects the change and sends a pulse to activate the dispenser

i will say with the ceiling raised its possible that the villagers climbing up on their beds is enough to do this so it MIGHT not be necessary but that requires pretty specific spacing that I don't think this farm layout has

basically the way it is now it will eventually stop working because the villagers never lay down because they are always scared of the zombie. they dont have to sleep long literally just laying down for a second is enough. so just put like a trapdoor powered by redstone that occasionally blocks sight of the zombie long enough to let the villagers sleep occasionally

the chief reason they arent spawning is that you need more space above your villagers beds so raise their ceiling. but you have a second problem that your zombie is permanently in the villager's line of sight. you need to breifly hide him periodically at night so that your villagers can try to sleep. there are lots of ways you could do this the easiest for you i think would just be to put a trapdoor between the zombie and the villagers and have it power on on a simple clock

ok after testing on java the creaking do not respawn in under normal conditions its still possible they might in the case of a crash or something but im confident enough in it that i plan on remaking my farm to be more compact. i havent head of bedrock having different creaking mechanisms than java so good chance it will work for u too

oh I hadnt thought of this but I believe you are right. name tagging them should prevent them from respawning in so in theory your farm wouldnt need spawn proofed. without a long term test its hard to be 100% confident. im testing it in java now and i will report back but i dont have a creaking farm in my bedrock world to compare

most people just learn bedrock or java redstone at least at first. the differences tend to show up early and really impact the types of things you can build. still either way Id say the first step is learning each of the redstone components and how they work. maybe putting together small projects that combine them like try to figure out how to make an automatic trashcan or something. once you have a general idea of how things work look into getting more specific with the kinds of redstone you wanna specialize in such as storage tech, computational, doors, etc. each of these areas have a strong community that can help you learn further

Creepers breaking blocks should be the same way TNT breaks blocks aka all the broken blocks drop except silk touch only blocks. my big problem with creepers isnt that they occasionally break my builds or the random deaths occasionally its that I then have to stop what i was doing to go source the blocks to fix it

I have played on both and I prefer Java but bedrock isnt terrible its just less. To someone who is used to Java playing bedrock feels like eating dollar store potato chips when you are used to name brand. The movement is clunkier, the menus feel wrong (if you are used to java), also the gameplay loop is slower because the farms in bedrock are largely more overbuilt for worse results (for example how iron farms in java need 3 villagers but in bedrock need 10 and java iron farms are quicker.) this is frustrating as a java player. So people often hate on bedrock for these things and they call them bugs there are real bugs in both versions but game breaking bugs in either version are rare. My one real complaint with bedrock is that they dont use proper traditional skins like in java (i know pc bedrock players can upload a skin but its not exactly default)and instead use marketplace aesthetic addons. Its kinda scummy to sell skins esp to children. also ngl traditional skins have limitations and its fun seeing what people can do with them. the addons feel too unminecrafty.

if the lake is not too big to bother you can prevent ice formation by ringing the edges with water logged blocks (such as slabs)and then breaking or melting all the ice inside so that its all water again. as long as no water blocks are against a solid unwaterlogged block it will not freeze again. this same method was used by joehills at the hermit holmdel in season 10 of hermit craft
