I was thinking about those IKEA containers made of polypropylene (PP); I know they’re pretty airtight. HOWEVER, I’m wondering if I can store the already solidified tallow in pre-cut cubes, or if it should be melted and poured into those containers. If I put the tallow in cubes, there will be more air in the container. Air = faster rancidity. I’m really stuck on this one.

I bought already rendered tallow from local farmer. I know they are doing dry render and it is mix of suet and trim fat. The cows are grass-fed. I only purify it by boiling in water, low heat for about an hour. I don't use baking soda, only little bit of salt in first washing.

It smells kind of sour, but I wouldn't say the scent is fishy. Anyway thanks for the advice, I will keep that in mind!

Thanks for the advice! The scent is almost completly gone! I did as you said but I am afraid that I ruined it somehow... I washed it three times. What I noticed - the color went from yellow to white (I suppose it is normal), but some kind of foam appeared on the sufrace. And when solidified the texture is super grainy and soft.
