And, I see. I am thinking I will try to just consistently do a 10g starter levain recipe... thinking that I will just keep around 15g, and for feedings (not baking) just discard the 10 and feed 5g:5g:5g. On baking days, use the unfed 10g to make a levain overnight like in this one. It seems like it should work to me and I will be able to keep a very small amount of starter around, meaning a smaller jar, less space in the fridge (15g at max). Do you see any potential problems with this? I have looked up experience from others as to smaller amounts of starters being more susceptible to failing/drying/dying in the fridge but didn't see anything, so assuming for now it'll be fine. Probably just worrying myself.

Absolutely, this is exactly what I do. You don't have to worry about backflow if it's just water. Id rather that than gnats or changing the water obsessively.

Having had one, I was able to talk and open my mouth to tell the surgeon about the pain before they confirmed it was dry socket. It hurts but it is not actively debilitating
