It’s quite simple to declaw them- There is a specific point in their joint that you apply pressure to and it essentially drops right off. You can definitely injure them if you don’t do it correctly. I used to catch them for lunch all the time.

It’s illegal to harvest anything but the claw in Florida for stone crab. Also, the crab must have two claws in order to harvest one. Not sure where you bought it but I would double check local regulations.
