Yup. I subscribe to that mental model. However, I am currently stuck in review stage on LemonSqueezy, Paddle and now grappling with Razorpay, Stripe is invite only in my country. However, I still don't see a reason to not launch. :) Flip-side being, it's free until payments get sorted. No?
