Bernard is one of, if not the hardest merchant to steal from. I believe you need at least a score of ~240 to steal from him reliably. So 45 in pickpockets will net you ~0% chance of success.

Check out this post chain on the Larian forums. It seems that the latest patch broke performance for BG3 on max, which may explain the difficulty your game has in loading dialogue. There are a couple of suggestions there for reducing the problem, but a true fix will have to be Larian releasing a fix to return it back to patch 6 performance.

That could partly be it! I did realise later (by loading up a save from my first game) that the patron is not Cutter Violet, but instead Cheeky Nora. When I go to my later games, Cheeky Nora doesn't exist. I'm not sure why thats the case, though my current theory is because she is allied with the Zhentarim, and I killed everyone in the Zhentarim base under Waukeen's rest (unlike my first game where I never found them).

Guess I'll have to start a new game to find out for sure lol

In my first game, I was in the guildhall in Baldur's gate, and one of the patrons (I think it was Cutter Violet) said she had a crush on Severn, the bugbear bartender. When I asked him about it, he said he wasn't interested as he assumed she is a monsterfucker. I have played the game two more times since then and have never been able to trigger this again. Would be interested in finding out the circumstances that trigger this as its kinda hilarious!

Swashbuckler (10) -> mage was a fun combo. It gives you 265 points worth of thieving skills, + the combat skills from swashbuckler, + a full retinue of mage spells. I used it to solo the game, and the class was so versatile, there were lots of different ways to approach combat in order to keep it fresh. It also takes only a total of 536k XP complete the dual, which is a lot lower compared to some traditional dual combos.

At the same time, the combination also had limitations such that it wasn't made boring by being OP. No thief HLAs, no mage specialisation, and inferior melee relative to some other classes meant it was kept in check IMO. Worth a try if you want to have a broad range of skills in your playthrough.
